We had a great weekend. I made macadamia nut crusted tenderloin with a ginger & habanero red wine sauce (link). A little pricey due to the cost of the filet, but it was freaking awesome! I am thinking that I could do it again with a pork tenderloin and that would be almost as good (and a hell of a lot cheaper).
I know it is a solemn remembrance for those who served - and gave their lives for our nations freedom. I am reminded that freedom isn't "free" because it has come at great cost... the lives of countless people who gave their lives to preserve it.
I couldn't say it any better. But I would like to add that our veterans are twice as likely to be homeless than the rest of the US population. Veterans make up about 25% of the suicides in the US. Largely due to the mental and behavioral health issues they suffer from as a result of their service. IMO we owe our veterans a lot more than they ever get in pay, retirement, health care, etc.
It was a good day for my wife and I. Our daughter and my son-in-law visited (they live about 3 hours away). She is expecting her first child... it will be our first grand-daughter. Chuck, you mentioned veterans. She works with veterans as a social worker (she is a licensed mental health counselor too). I am proud of her choosing to help veterans.
My wife and I also went out to the cemetery where both of our families are buried, going back a lot of generations. Many of them were veterans also. It's kind of wild that my wife's family and my family are buried close to each other. Anyway, sitting here tonight (watching Caleb Williams games) I'm just trying to process the day - so many memories... I'm the last one alive in my immediate family. Feels weird for sure.
